Large bunch of kale
4-6 pieces (medium to large) sun dried tomato1 c. raw cashews
4-6 pieces (medium to large) sun dried tomato1 c. raw cashews
1 small jalapeño
2 lg. garlic cloves
2-4 T. fresh basil
Juice of 1 lime and 1 lemon
2 T. nutritional yeast
3/4 tsp. salt (use your favorite — pink Himalayan, truffle salt, lavender salt ect
1/2-3/4 c. of sun-dried tomato water
Wash kale, remove thick stems, tear into bite-size pieces
In separate bowls, soak cashews and sun-dried tomatoes in water for 2 hrs.
Rinse cashews and drain
Drain sun-dried tomatoes, saving the soaking water
Use high speed blender (VitaMix is what I use) and blend together all the other ingredients; adding in sun-dried tomato water to thin (it will be thick, you don’t want runny)
Mix with the torn kale, coating all the leaves thoroughly (get in there with your hands, massaging the kale until covered with sauce)
