Are you in for something fresh, delicious and spring like?
Here you go:
1 cup carrots
1 cup shitake mushrooms
1 cup onions
1/2 cup parsley
1 cup sprouts
fresh cilantro leaves
your favorite dipping sauce ( I use my own sweet & sour)
Place carrots, mushrooms, onion, jalapeño and parsley in the food processor or shred real fine, than transfer into heated pan, slightly coated with peanut oil (or substitute of your choice) and cook for about 3 minutes. Add soy sauce to taste, fill in bowl with spoon and set aside.
Now fill another bowl with cold water and soak one rice paper at a time till soft and transfer onto board, fill with 2-3 spoons of filling and roll. Top off with cilantro leaf and sprouts and plate. Once all rolls are done just dip into your favorite sauce and let the fun begin, enjoy ❤
