Frittata is an egg-based Italian dish similar to an omelette that you can enrich with additional ingredients from leftovers in your fridge and pantry. Just be creative and use a variety of colors and flavors. Spice it up with jalapeños, peppers and garden veggies.
Making Frittatas are fun, economical and a great way to prep for picnics, breakfasts with friends, lunch on the go and even dinners when served with soup or salads.
- HEAT oven to 350°F.
- BEAT eggs, milk, salt and pepper in medium bowl until well-blended. Here I added mushrooms, cheese, tomatoes, spring onions, bell peppers and baked potatoes.
- mix well.
- SPOON evenly into 12 greased muffin cups, about 1/4 cup each.
- BAKE in 350°F oven until just set, 20 to 22 minutes. COOL on wire rack 5 minutes and
