Saute the shrimp in olive oil and season to taste with sea salt and pepper. I drizzled some Aleppo chili over them as well. Set aside to cool and prepare the salad, mint leaves, cucumber and scallions. You might want to add carrots or celery or rice noodle. Assemble and roll in rice paper, plate and enjoy:)
For the dipping sauce I used homemade peanut butter with Lime Ponzu and Jalapeño
